I wouldn't even care if Sanji wasn't also the guy constantly sexually harassing every woman he came across and cumming through his nose while making increasingly disgusting rape faces whenever one approached him. He's already a pest to women and him choosing not to attack female enemies who will quite literally just kill him without a care in the world doesn't make him look like a better guy and a chivalrous gentleman, it makes him look like a complete retard.
I could kind of buy it pre-timeskip but his time on Ivankov's island changed him into a truly repulsive character.

Well a central part of his character is that obstinate stance on not fighting women as a result of his dedication to Zeff and his teachings. So any watering down of that would have to be paired with a significant focus on why Sanji would alter that part of his personality.

I think the real parts that people dont like about his character is the perverted stuff and just how much he puts himself at the mercy of women as a result of it. That's the part that could be more easily altered so that he doesnt get himself into silly situations like his fight against Kalifa when he could just refuse to fight and leave. He sort of does that by calling out to Robin for help against Maria, but that was only after he got himself into a stupid situation by being lured in by Maria in the first place.
