In a way, I think Goku has become so overpowered that he cannot serve as the ideal protagonist of any story outside of tournament arcs. This is mainly because of instant transmission. He can go absolutely anywhere (with the very weak downside of him having to sense ki which is never a relevant limitation) and so you can't have any stories about space travel or adventure in general.
That's why GT had to remove IT from Goku for him to do anything (and even there, he wasn't really the protagonist, he took a backseat to Trunks and Pan for half the show, just acting as hired muscle basically).
If I were rewriting Dragon Ball, I'd make it so Goku could actually serve as the real protagonist for more than a third of the manga by removing most of the "waiting for Goku" plots (King Piccolo, Saiyan, Frieza, arguably Buu), or, at least have the other characters actually accomplish things of significance while Goku is on his way.

If you retcon the entire show so that's it's all about technique and Bejita+Goku aren't stronger than everyone else and don't have galaxies of potential above everyone else. In addition, any gain of power is gainable by anyone, i.e. what happened before the Saiyan Saga (Goku got his power from training and Ten, etc. can get similar power by similar training).

Yamcha either quits entirely or starts using ki constructs to play off of his wolf motif and Sokidan.
Chaozu either quits entirely or gets situationally strong psychic powers that let him do funny gags. Like, using his telekinesis to force a big pink poo out of his enemy's stomach.
Trunks keeps trying to grow as a fighter to impress his father. Goten doesn't understand this motivation, but trains to surpass him anyway. They end up trying to one-up each-other by tutoring under the other Z-fighters, like Yo Son Goku! implied when Gotenks did the Rogafufuken. Gags ensue.
Gohan stays somewhat in shape to keep Goten and Trunks in check, maybe he gets to deal with an arc mini-boss every now and then.
Expand on Ten's new Crane school, maybe add some friendly rivalry with the Turtle school.
The rest stay relevant via relation to Trunks and Goten.
