It was a good manga before the last quarter or last 3rd but I think it would require too high a budget to be good. a lot of the reason why it was good was because the execution of many of the panels really good, and the mangaka used his art and the panelling in a way that doesn't translate straight-forwardly to anime, for example Sensei's early fight scenes with a sledge hammer. So you need experienced and skillfull animators working on it to be able to come up with an equivalent that's as exciting and impactful.

Disney+ only has the international streaming rights, right? Doesn't that mean they have no creative power over the anime? I guess they could censor some stuff when it comes to their platform but if fansubbers are ripping from the JP broadcast I don't see any issue

I think so. In most cases streamers like Funi and Netflix are merely the streaming partners and aren't in the production committee, so they have little-to-no influence over the actual production.
