Her mother’s problem was that her brain was permanently fucked up by the contact experiment with Unit 02. It likely had already absorbed her soul during the experiment. When she felt her mothers presence in unit 02 during End of Evangelion, that was the real her.
That was mom's biggest problem, she already had some before then. Plus the personality inside 02 was still going "die with me, Asuka".
It was a failed contact so maybe she’s still a bit fractured in there. Plus it kinda just tells you right there in the subtitle that she worked too much.

From what I remember of the deep diving I did on it back in the day, Kyoko's soul was partially absorbed by the Eva, so the part of it that's inside was a bit screwed up and the part of it that was still outside in her body was very screwed up.
Before that, she was probably "only" screwed up in a pretty standard workaholic way; obviously not great for her relationship with Asuka and would inevitably lead to some issues, but not at a truly disastrous level.
They all needed someone to talk to. That's the tragedy of it all.

I hadn't considered this possibility before, but good point. Something about the fact that Asuka had been selected as a pilot at such a young age, so soon after the Kyoko contact experiment, did always seem a bit weird.

There's a lot of details that are never really made clear, but there is mention made of re-configuring the Eva's cores for other pilots; presumably that basically amounts to swapping out which soul jar is appropriate for which pilot. Mention is made of this not having been done yet when Kaworu is assigned as Eva-02's new pilot, which implies it is possible with Eva-02. If there's a reason cores can be swapped between 00 and 01 but not 00 and 02 or 01 and 02, we don't know. Really there's a lot we don't know, like exactly what the deal is with Eva-00.

They really don't. It still took another decade to successfully activate an Eva and depending on teenagers to pilot wasn't even what they wanted, they switched to dummy plugs when they were viable.
Pay attention to the Director's Cut version of episode 23. Post Contact Experiment, Asuka's mom no longer recognized Asuka as her daughter because she thought a doll was Asuka. Asuka's mom then killed herself with the doll because her soul was broken.
In EoE, Asuka's mom (whose soul is in the robot) eventually recognizes Asuka.
Unit 00 didn't really go smoothly either.
We'll never truly know what mainline Kyoko is like. The only data we really have on her personality outside of the main series is fucking Raising Project, where she's a near idiot-savant womanchild.

there's no core-swapping being done in that ep 14 experiment, it's possible because of rei and 00's unique circumstances. the stated point is to test how they can sync with the other, not how they can sync with the same core in a different frame.

In that case, I can see how Rei could sync with Yui (until Yui decides NOPE in ep 19 or whichever it was), but it's less clear why Shinji would be able to sync with Rei I. Unless it's the close blood relation" angle it works on rather than it being a parent/child bond like it's always implied to be before.

If Shinji's experience is like Rei's first activation when 00 went berserk the exact same way, 00 is aggressive and invasive with visitors. It could know about Shinji from reading Rei and be at least curious because it's almost Rei, too.

You can only talk things out of you're just pretending to be retarded. EVA characters are past some sort of zero point (the taxi driver) where the rage has become a core part of their personality. Maybe someone like Misato or Kaji would stabilize in a normal situation but someone like Ritsuko would just fucking snap without warning one day.

It's not. Anno went for surrealism and a lot of the details get lost on their way to the viewer.
And it still has all the regular animation and continuity errors, so we have the additional dimension of splitting hair about which details mean anything and which are accidents.
I'm sure at least some of it is intentional to get people talking cause Anno is a manipulative fuck. The only time NGE starts clearly communicating is when Asuka has one of her POV scenes and starts directly addressing the viewer.
