Nothing illustrates better how much more well-written and well thought out Rin as a character and as a heroine is in comparison to Sakura than the high jump plot point and how that figures into their relationship with Shirou and what it says about them.
Let's start by analyzing the importance of the high jump scene for Rin.
Rin is unique among the three heroines in that she is only one whose romance receives development across all three routes, not just her own. It is only by looking at the VN as a whole that one can truly come to grasp the totality of the nuances and dynamics of Rin and Shirou's relationship. Although the romance receives its teleological end in UBW, it is only by taking into account certain key scenes from Fate and HF that one can, mostly retroactively, completely understand how the two work together.
The key scene which must be contrasted with the high jump confession with Rin comes in Fate, the day after the battle with Berserker where Rin tells Shirou she can't teach him any more magic for the duration of the war and she promptly states than she has no intention of dropping out of the war despite losing Archer. We are treated to a monologue by Shirou where he expresses why he admires and likes Rin:

There is a reason this scene is placed quite early in the VN -- the purpose is to have the revelation about the high jump occur late into HF so that Shirou's view of Rin is recontextualized by the knowledge of how she views herself, namely as someone who isn't alike Shirou at all:

Yet despite her feeling that she should try to be the latter, she secretly yearns to be the former, which is why she feels so drawn to Shirou, who acts as an inspiration for her. He brings out the idealistic, uncompromising streak in her. He both passively and later as they fall in love actively encourages her to be the best she can be.
Shirou had always admired and idealized Rin. When he meets, he learns that she is different than what he had imagined her to be like. She's clumsy, cranky, snappy -- and most importantly of all, she isn't as strong as she appeared. She has doubts and insecurities. Traumas. She's constantly second guessing herself and belittling her own abilities. Yes despite this, he says:

The fact that she has so much baggage weighing on her back and is held back by her fears and weaknesses yet STILL manages to be as awe-aspiring as she is makes MORE amazing, not less.

The theme of UBW after all is "struggling with oneself as an ideal" and the key takeaway is that despite the fact that ideals are inherently unachievable there is still beauty in the struggle to live up to them as closely as one can, knowing you never truly can. It is thus fitting that Shirou loves Rin so much that he yearns to have her live up to the Tohsaka inside his head, the idealized image that he refuses to let go off even after meeting the real her, to push her to overcome her fears, insecurities and traumas and be the amazing beautiful Tohsaka Rin that he knows deep she can be -- and he wants her to be. Shirou can see Rin's internal struggles and her lack of confidence in her own abilities, and decides to help her out. To Shirou, there is no greater joy that HE was able to help TOHSAKA RIN. He wants to always be there for her, to help her get back on her feet when she inevitable slips and stumbles, in order to help her live up to her potential. It's his confidence that Rin will always be able to get up, dust herself off and keep on being the amazing person and woman he fell in love with, that is so beautiful and amazing.
The high jump scene truly reveals why the romance between Rin and Shirou is so amazing as it exposes the reciprocal, mutually supportive relationship wherein Shirou acts as an example and as a source of emotional support for Rin as she overcomes her insecurities, and Rin acts as a fetter to Shirou's excessive altruism and suicidal tendencies while still completely supporting him in his pursuit of his ideal as she fell in love with him precisely because of the unyielding spirit that he prescribes to her but she feels she lacks. It's something that makes the romance so much more deep and layered.
In comparison, the romance with Sakura doesn't even come close to the level of thought and care that was put in the one with Rin. (cont)

Following up a route where the love interest fell in love with the protagonist because of his persistance and thus chooses to support him in his pursuit of his impossible ideal with one where the heroine loves his for the same reason yet he is forced to give up on the ideal he cherishes so much due to strenuous circumstances and it's partly HER fault... is an amazing idea. There is so much potential for writing a unique and layered nuance there.
Sadly, all of that potential is wasted. Aside from a few scenes, this dynamic is woefully underexplored. Sakura expresses she feels guilty she is forcing Shirou to abandon his ideal after the knife scene and it's partially what drives her to confront Zouken... and that's it. Yup. That's fucking it. Neither of the endings truly explores how Sakura feels about any of that, nor do she and Shirou discuss it at any real length throughout the route. One fucking scene to fulfill that quote and that's fucking it. And why is this the case? Because Nasu didn't put any real thought into the romance. Why does Sakura love Shirou for his persistance? Because Nasu thought it would make for an interesting dynamic in a route where Shirou "ceases" in his persistance and iron will? No -- it's all because Nasu sought to contrive a situation that would make Sakura even more resentful of Rin and cause a confrontation between the two. Sakura loves Shirou for being the naive idealist he is... because that's what Rin loves about him and Nasu needed to have a reason to get Sakura jealous of Rin.
And that I think perfectly exemplifies what's so bad about the romance. It's very half-baked and poorly explored because it ultimately exists as a conduit for the more interesting and well-developed sub-plots of HF, like Shirou's relationship with Illya and Kirei, and the conflict between the Tohsaka sisters. which is why every romantic scene needs to be overblown melodrama with sappy music to tug at your heartstrings -- because Nasu needed to compensate for the rest of the romance being so underdeveloped, shallow and fucking retarded. The gulf in quality between the romance and the rest of HF is so massive that it is honestly quite hilarious. It's honestly embarrassing.
