I try to set my log horizon at 64 days. That allows you to capture diagnostic events that occur on a monthly basis, but isn't as demanding of disk space like 90.
And it is also a power of 2, which is very satisfying.

Sell me on Log Horizon. What would be appealing about it to someone that doesn’t like isekai other than the existence of fantasy politics?

I'm sorry but I think that's a (You) problem. Not trying to defend LH and I haven't read the source material. Anime had its problems but I didn't find it confusing.

First season was pretty great, second season took a deep nosedive and then we had to wait for so long for the third that I stopped caring and still haven't watched it. At this point I feel like I need to rewatch s1 and s2 to watch s3 so I just haven't gotten around to it.

Does s3 even wrap up the story or is there more?

I think it's a major problem with adapting works that aren't finished and will never get full adaptations in anime form. There's literally no point in starting a thousand sub plots when none of them get an ending. Even more straightforward shows suffer from never getting full adaptations. It's an anime industry issue. They need to stop adapting FOTM and instead adapt series that are finished or close to finished and popular enough to fund full anime adaptations.

he has an assassin for that kind of stuff

Season 3 covers their implementation of a democracy in the Shibuya district and how they addressed the problem with low level adventurers getting neglected and the other people who just don't want to play anymore. It was a necessary arc, but it was nothing to write home about.

I tried to watch it, but got really bored by the 5th episode and stopped.

For me the appeal lies mostly in the meticulous worldbuilding and large, diverse cast of characters. LH asks a lot of "what if" questions about its setting and extrapolates from there what that would mean for the characters and world at large (in fun and creative ways).
It allows for big plotlines with many moving pieces that feel like they evolve naturally. No idea if that makes sense, but I can't really explain it better kek.

First season is good, but everything after is disappointing. And it's not a DEEN problem, it's a writing problem. Typical LN bloat: too much ideas, too much characters, too much plotlines,... For very little payoff.

Went a bit downhill with the whole AYY LMAO stuff and half of S2 + S3 were disappointing. Oddly enough I remember more from the book than the anime adaptation of S3.
S1 is still one of the best isekai series though because the author based it off their experience of decent games (RO, EQ2 etc.)
