Self insertion is a spectrum, not a binary. As a character gets more "blank" (less defined personality) they move further up the scale and become more of a self-insertable character. Gojo lies somewhere in the middle of this spectrum. He has a somewhat more defined personality than the interchangeable average Iseaki MC, but is not wholly distinct or specific enough to be completely his own man that one must view from outside.

His specific hobby/profession (Hina dolls) is a superficial detail. Nobody is self inserting as Gojo because they identify with Hina dolls, they are doing so because of his deeper character traits which are generally relatable and non-specific. He is a misunderstood nice guy loner, he's awkward and not very confident at the beginning and is embarrassed of his hobby. These are things that a huge chunk of the audience can relate to and allows them to self insert as him.
