Universe wasn't reset, Pucci was just deleted from existence so that part 6 didn't have to happen. Part 7 takes place in a far away parallel universe but on the same universal plane as parts 1-6.

Thanks to Emporio, who killed Pucci while his stand had not yet finished fast forwarding the universe 1 full loop, time was essentially rewound but with Pucci absent, to when he initially accelerated it. Thus, our characters remained alive, but with their fates rewritten since their encounter with Pucci would never happen.

Sorry user I read part 5 and then kind of loosely followed

I'm hoping that the anime will do it justice, manga panels were pretty vague. I've reread the last few chapters a lot to try and understand it, but I might still be wrong. If my memory is correct Araki was given 10 chapters to wrap it up by SJ and this is what he came up with, so it's possible that he wasn't able to convey everything as clearly as he wanted to.

Honestly Jotaro and Giorno aren't very prominent in their own stories, Joseph is actually the leader most of the time while Jotaro is a sort of inscrutable wildcard (actually just autistic). For Giorno, he's basically a sidekick to Bucciarati who just knocks down the first domino and inspires other people rather than being central to the whole scheme of events.
