Long stories are hard to write for. Even when you do have an ending in mind, sometimes your plans don't always end up happening to the letter, so certain aspects either feel out of character or have to be rewritten entirely. TV tends to suffer from this a lot in general, look at the outcry of How I Met Your Mother or The Sopranos or Game of Thrones.

Mangas are just anime originals that took too long to end.

probably because tons of them died in ww2 and because they're all grouped around the mean

most manga are serialized, which means they're designed to run for as long as possible. and when a manga does run out of steam the mangaka is only given ~4 chapters to wrap things up. having a fixed ending in mind is a creative constraint.
the problem isn't unique to Japan or manga. any series that runs until people or production loses interest has the same problem. eg Western shows like Lost, Dexter, etc.

Kishoutenketsu is all about the twist (very, very roughly equivalent to the "climax" segments within Freytag's five-part structure). Basically, a practiced or culturally attuned Nip writer likes to build a story's foundation with a generic setting, lead it and its characters into a development which appears unassuming within the context of what had already been established, and then the writer will turn things on their ear with the focus deliberately placed on that sudden transition from normalcy to "new reality" without necessarily being too concerned with the "ending." The whole Kishoutenketsu writing formula is more about cycles and surprises rather than finite endings. This is mostly why you get "and then things kept going" sort of endings rather than hard stops with "strong conclusions." It's just not how Nips have traditionally written their creative works.

Seriously, you should learn typical plot which Japanese like. It doesn’t matter whether you like or not, but it’s definitely different from Western one.

I recommend Genji tales and Kawabata’s works. Ozu and Kurosawa films are also good.

Japanese endings are like Film Noir. Film Noir started out as a rejection of traditional pulp tropes. At one point it was new and subversive. Of course you know what happened, Film Noir just created a whole bunch of tired and old cliches of its own over the years. The cliches were different than what came before but they were undoubtedly cliche.
Japanese endings are like that. In an effort to not be cliche happy endings or even cliche traditional tragedies they have instead become, and have been for many decades, cliches of their own.

Every time I see a Jap romance end with them breaking up only to run back into each other in the last shot I drink an entire bottle of whisky.

Satisfying endings are hard work with little payoff. It's easier to write a lazy generic story with a "clever" twist as a hook that gets abandoned a few chapters or episodes in, then drag the story indefinitely to keep selling the same shit. The problem is people keep buying this shit so they don't have to change.
