I like these stories as well. The only one that i can think of that includes such a thing is Angel Densetsu. The MC gets early on a love interest which quickly turns into an actual couple and they remain lovely dovely until the end, even though ironically the story itself is all about misunderstandings, the romance actually(other than the first chapter about the girl) doesn't have any of it. It was really refreshing to read something like that.

They don't actually get together until the end of the first manga, and the second manga has barely any couple-y things because the daughter overshadows everything. They're definitely good slice-of-life manga in their respective genres though.

There's very few, because anime is foreveralones, and Japan is also purity focused, so girls that are in relationships can only be used goods. It also doesn't help japanese people are pretty shitty at relationships in general these days.

It's definitely a common trope; a "genre" is just a "trope" enough owners of websites that classify things into "genres" decided to add to their database.
