I preferred the Byakuya v Tsukishima fight, I felt that Byakuya had a more difficult time there despite being against a technically inferior opponent. Zommari was completely outclassed here, Byakuya's Bankai was a total hard counter.

There was no timeskip. Tsukishima fights Grimmjow like a few months after the quincies were defeated. This Tsukishima is basically the same as the old one.
Also being a human/Fullbring doesn't make you weak either. Ichigo with FB returned to his old Bankai level of strength when he mastered it.
