Plots are easy to understand. That's what they are supposed to be, a plot that's difficult to follow is a failure in screenwriting. A film isn't just a script, most of the actual text comes from how the writing is translated into filmic storytelling with imagery and sounds.

What is complexity? Usually it refers to one of the following:
A) information being conveyed poorly, possibly intentionally
B) an unwieldy amount of characters
C) redundancies (B is sometimes related to this)

There's a difference between a story being generic or obvious and a story being logical. I can't think of a single Miyazaki work that progresses without logic. Logic is necessary to connect the events together into a story in the first place unless your goal is to make a mess that can't be viewed as a connected story which has never seemed to be Miyazaki's goal.

A story doesn't need those to be considered a story. A story can be created that just stops and isn't trying to say something as a message from the creator. Also people can get completely unintended messages from a story that the creator wasn't going for.
