"Shounen" is used as a synonym for "battle shounen". This upsets autists.
Because most of Yea Forums is media-illiterate and just likes to autistically categorize things.
The more nuanced answer is that stories for each demographic have common themes and tropes that recur across genres, so it's sometimes convenient to refer to those tropes by their demographic as conversational shorthand, or as a modifying adjective to single out that part of a genre that is aimed at a particular demographic: battle shounen, shoujo drama, etc.

I primarily read seinen and I'm willing to read effectively untested series in hopes I find something good. Shounen has a few gems so I usually wait for others to dig them out. Similarly for shojo. I find that josei is primarily about relationships which I don't find as entertaining so I rarely read any.

Josei is an underrated genre.
One of my favorite movies.
It just means the target demographic of the magazine they're published in. The content itself is more dependent on the brand of the magazine than the demographic. The stuff published in Ultra Jump is more or less a natural step up from WSJ, whereas Kirara is all CGDCT, all the time.

A manga is whatever demographic the magazine it runs in is aimed at. K-ON runs in a seinen magazine just like Yotsuba runs in a shounen magazine.
