It helps that Ako got to play a decent role too considering she's my favorite girl. Eh, it comes down to tastes. For the most part Negima has been carried by the supporting cast, because as bloated as it is, it is more interesting than Negi, his low self esteem can get infuriating at times (that in the end it became the main power source for his main skill is actually funny), while Touta's happy-go-lucky personality makes him a more entertaining character to read about with his interactions with everyone, but the moment things get serious he loses his charm and becomes generic as fuck.

You do know that reboot cut out half of the manga and was narratively incomprehensible, right? Not the best example. And Negima is longer than Houshin Engi, if it gets a reboot there's no way it'll cover the whole manga.
I'm actually surprised we even got UQ Holder, I could have sworn Ken once expressed he didn't want another anime, I could be remembering completely wrong, though. Still, UQ also had half of its content cut out to focus on the Negima subplot. Honestly, that probably WAS the attempt at reviving Negima but it failed.

(That was part of the problem, he couldn't permanently finish off the lifemaker and needed someone smarter to not just brute-force their way to a solution). Hmm. Well, at the very beginning when "immortality" was being brought up (so, early in the manga, single digit chapters I believe) they made a clear separation between exactly those two things you brought up:
1. Invincible
2. Immortal
No one in UQ is invincible...basically, no one in the Negi-verse is invincible, it's just a description that invariable gets transposed to those found to be "immortal" by mortals.
But to answer your question,

I'll stick with the extremes.

Kirie is just an ageless little girl. She's as easy to kill as any little girl. But, her power allows her to restart from a "save point" every time she is killed. As a result, she can seem almost precognitive if she loops enough of a scenario, making her seem extremely experienced (because she is).
Jinbei is similarly ageless, and outside of his experience (and unrelated-to-death "switcheroo" power) he's also very easy to kill. He just uses his switcheroo nonsense to keep himself glued together (or avoid things) until he's healed.
Gengoro is also easy to kill as any human, he's just ACTUALLY invincible when he comes back to life (thanks to his "stock of lives") for 3 seconds. But, apparently, "invincible" means nothing to a dude who's good at cutting stuff because fuck you audience

Santa is already truly dead. He's just a revenant so spiritual that the only way to defeat him is to exorcise him with actual holiness.
Eva/Tota are so powerfully regenerative and dismissive of "fatal" wounds that in order to mash them into such indistinguishable mush for long enough is really, really hard to do.

Seeing what this manga turned into pretty much makes me love the early chapters more. It hurts that the author intended for it to be a battle shounen. I kind of liked the more heartfelt moments and vulnerability of being in a new situation that Negi had. He also had character. He wasn't a clone of Keitarou. He also wanted to work hard. Negi is 'on their stage' because of his wits and intelligence, something that he's been better at than Nagi for a long time. However this is still a big moment as it marks the point where Negi is finally starting to reach them. Before this point, Negi reaching their level was like a far off dream he was nowhere close to yet. Now, even if not as strong raw power wise, he's still strong ENOUGH to make up for the rest in planning. It's still a big moment for sure, but nowhere near surpassing Nagi.
