there's a lot of politics, a lot of downtime, and the world is filled with genuinely good people alongside all the bastards and monsters. a lot of edgy series are fatiguing because they never let up with the darkness.

Because Berserk actually has some good writing and gives reason to the edginess. Edgeshit like Tokyo Ghoul is nothing but blood and gore and think that makes it deep and complex

Lot of stuff we'd classify as 'edgy' feel the need to constantly spit in our faces that awful stuff happens all the time to people (Akame ga Kill to name one example) and there's no complexity to either the protagonist and his/her crew or the villains. Protag and co. are almost always universally goody-goody, fight the powah, save the wimmins and chillun while the villains are always 'maim kill burn and maybe make time for a spot of rape here and there'. Berserk has its flaws, but I've reread the series from start to wherever it's got up to like nine or ten times over the last ten odd years. I can't really say the same for, shit, anything else really.
What I personally like about Berserk, maybe not so much now, but certainly years back, was how indifferent the world felt to Guts. He was a dude with a mother of a grudge but even the object of said grudgening felt little more than apathy towards him when they met post-murderfuck of the Hawks. He wasn't a Chosen One, no object of prophecy, no long lost son of a forgotten kingdom. He was an orphaned kid LITERALLY born in a ditch with a shit life who lost his grip on the family he grew to care about in the worst possible way and, despite fucking years of struggling, isn't really any closer to his goal of killing the object of his revenge.
