One Piece anime has major flaws (esp compared to the manga) but it's nowhere near the most boring.

Not sure what I'd call the most boring. I tend not to watch. Sword Art Online is probably the most boring anime I bothered to finish watching.

If you want quick resolutions to arcs One Piece is not the anime/manga for you, I think that was pretty clear as early as Sanji joining the crew.

Greed Island was a training arc and it had the kino dodgeball game. It's not the best arc by any means but it's still good.

Togashi just relies too much on contrived tournaments which is basically what Greed Island was.

Greed Island was a way to make Gon and Killua stronger without making a generic training arc

I stuck with it but hunter was always kind of boring to me. Even when nen was introduced Gon just spends all his time meditating. Kind of like how Toga skipped the ending to the hunter exam, just felt lazy.

Sure, if you just want action and fight scenes I could see this perspective, but the mystery of what exactly happened that unravels over the course of the episode was really cool. Honestly I'm not sure what showing the fights would've accomplished. Hanzo demolished the other guy, there was a fight with Hisoka and Kurapika where Hisoka was barely trying and Hisoka beat Bodoro handedly. It's not like these scenarios were worth covering in detail, especially when Hisoka wasn't even using his abilities.
