Haven't seen the movies, but my guess would be most of the string of episodes after Char disappears from the show for a bit which are incredibly boring to sit through.

If you can't finish 0079 in its TV format then I don't think gundam is for you. A fair amount of the other
TV shows (Zeta, ZZ and Victory) can be a slog to get through.

Depends on the problems he's having with 0079. Most of my problems with it were fixed in Zeta and I found it very enjoyable. ZZ is a nightmare but for very unique reasons that have little to do with 0079 (not that 0079's attempts at comedy weren't also terrible on the whole).

I honestly found Zeta to be the worst. If Katz didn't die when he did I would have dropped it right then.

It's been too long since I've watched the series or the movie trilogy to go in to specifics other than obvious stuff like the most toyetic stuff being removed and replace for the movie version. I can say with a high degree of certainty though that a lot of important character development ends up rushed in the movies.
If it's your first time I highly recommend the series over the movies. After that you can watch the movies whenever you want a refresher.

Katz is the only one I sort of get finding annoying amidst the group of Zeta characters that are frequently called such (Sarah and Reccoa being the other major ones I'm pretty sure) but even he served a purpose as a kind of counterpoint to Amuro and Kamille by being someone who's exposed to war but fails to adapt to it like the other two did.

You get all the beats you need for all the characters that matter. Pretty sure Job John doesn't exist in it but they say he's in all three

Ones I dropped at some point because I didn't like it:
Stardust Memory, Unicorn, 00 S2, SEED, AGE

Characters getting better fleshed out and a handful of nice episodes adding tension or character moments.
The movies do a good job at summarizing the plot and even respecting the original weight of some plotlines, what they can't help missing is the worldbuilding of how the war really had everything go to shit for civilians and military everywhere and the string of (allegedly a bit boring and super robot-esque) pre-Odessa episodes where the White Base faces the consequences of having been basically abandoned by HQ so everyone's exhausted and cynical.
Oh, and you wouldn't be as blindsided about how completely out of the blank the whole 2001 space odyssey newtype visions come into play after the gritty, grounded battle at Solomon

The movies are objectively the best way to see MSG at this point. The series has unfortunately a lot of filler that amounts to nothing.

The only thing the movie doesn't have is the Gyan battle which while a neat robot really doesn't fit the rest of the series.

0079's second cour is the weakest because there's a bunch of toyetic shit shoved in like all various the gattai modes and it starts as literally aimless since White Base's just wandering around. Power through it for based Ramba Ral and the quintessential "teen MC is fed up with authority structure and wanders alone for a bit" that so many mecha series lifted from it. Everything post-Odessa is a wild ride that gets better and better.

And now half-way done with Wing. Out of all Gundams I seen my favorite is probably War in the Pocket and Stardust Memory is garbage and a strong contender for worst anime ever made. Maybe Iron-Blooded Orphans is stronger.
