The funny part is that Japanese swords were folded several times to spread the impurity of the metal and make them less fragile due to how shitty japan's metal was.

Europeans had the same metal avaliable but no one considered using it for warfare due to how shitty it was. And the europeans also knew the folding techniques but had no use for them due to having good material to use.

Most of the pre-war blacksmiths are probably dead and a cheap molded swords were considered "good enough" for normal use, but no regular sword was going to be useful against demons anyway no matter how well it's forged.
