Even if you assume that Kirei is right, which is a pretty big assumption since Kirei makes mistakes and loses in every route, he deliberately excludes himself and Gil from the list of people that Shirou will defeat. Crane Wing is Archer's ONLY usable trump card against Saber at close range, and even then he needs to get in the right position since it's really finicky. And at any rate, Crane Wing isn't even Archer's best tactic against Saber; sniping from a great distance is.
People who think that Archer can instant-win against Saber just because he has Crane Wing are deluding themselves. Plus it's not even like Crane Wing is an absolute almighty technique that can't be beaten either.

The cave was pretty large. More importantly, the problem is how it works. If Saber's in Archer's face the whole time without giving him room to breathe, he can't use Crane Wing. Saber's faster than Archer, so backing away from her and creating enough distance for it to be effective is going to be difficult.
Nasu also said that the conditions for Archer's victory lie in his long-range sniping, not melee combat. Saber has few counters against sniping since all she can do is hide and defend. She might be able to escape, but closing the distance is difficult without Master support. If she's allowed to use Excalibur, she'd probably win, but if not then her only course of action is to retreat.
If Archer's forced into a close-range fight with Saber, he needs to either use Crane Wing or get wrecked. Saber has many ways to beat Archer in a head-on fight. Archer only has one.

I recall that to use crane wings first you throw K&B at the enemy, then when he blocks or parries them you use another pair of K&B to hit him. Then when he blocks your 2nd pair of K&B the 1st pair will fly back to hit his back while exposes his body, you then use the 3rd pair of K&B to oneshot him. Since Archer was fast enough to replace K&B when Cu disarmed him he should be able to use crane wings against Saber. I really don't see how you can defend against crane wings unless you can break K&B in one strike or have really good armor. Maybe if you retreat after the 1st pair you can disrupt the combo?

Lancer, for instance, is completely immune to projectiles of all sorts. He needs to be fucked up in melee. It probably took Gilgamesh 12 hours to finally get off his fat ass and use something with his hands, or he resorted to Enuma Elish like he usually does.

Saber and Archer could fall into the same circumstance when Archer retreated a little, threw K&B, Saber then blocked them and got tangled into crane wings.

Agility is only a measure of how agile and dexterous you are. Saber's Mana Burst turns her into a human rocket. And even Tsubame Gaeshi is can be dodged if both the attacker and the target aren't on optimal footing. As Saber showed.
And that's the core issue: Archer can't just fucking pop out Crane Wing whenever he fucking wants. Shirou was able to get Saber Alter and himself into the optimal conditions for it to work, but he can't just use it when Saber's jetting around like a goddamn rocket or launching a flurry of attacks at right in his face.

It is entirely possible for Archer to set up crane wings against Saber. Saber never dodged a complete Tsubame Gaeshi. She either dodged the incomplete one (2 hit) or the one after Kojiro katana was bended. Archer also has the Mind Eye or something which could give him the possibility to pull crane wings against Saber. Of course it's not like he instantly used it, like his fight against Cu he would use it after making sure it would work against Saber.

The problem isn't whether she can dodge Tsubame Gaeshi or Crane Wing, the problem is whether she'd be in the optimal place for it to be effective at all. Even fucking Kojiro can't just pop out Tsubame Gaeshi whenever he wants. That technique has an extremely clear and defined area of effectiveness. Same with Crane Wing. Also, Kanshou and Bakuya don't have any inherent homing properties other than their inherent magnetism towards each other, so that first throw has to be fucking perfect. If she's not actually within the thrown K&B's circle, it's meaningless. Unlike with Hurnting, Archer can't change their trajectory mid-flight.

Merlin created some sort of condition. Basically, Saber had to wait forever and Shirou had to seek forever, even if they both know it to be impossible. Like imagine that your dream is to reach a distant star. Naturally, you know it's impossible, but in spite of that, you still reach out towards it without cease. You never stop reaching even until the day you die. That's the condition set for Saber and Shirou. They have to both acknowledge that it's impossible but still wait/seek for it. In the case of Saber, it must have been even more painful since what she wanted was very clear to her. In the case of Shirou, he didn't really know what he was looking for, but he just kept walking and reaching towards it until the day he died.
Once those two absurd conditions are met, Merlin's little trick apparently worked out.
Well, in theory, it doesn't really seem that strange if you think about it. We don't actually even know how Merlin and Saber reached Avalon either. Like, we understand WHY it happened, but the actual mechanics for it have never been laid out. But since two people managed to make it there, in theory, there's no reason a third can't.

The difference of course is Stay Night Kirei is honest with himself unlike Shirou. So Archer being WOKE tries to open his eyes.
Thought to this day I don't understand how come Shirou won their little debate. Anime version with drawing Excalibur from the stone and memory of Kiritsugu's last words made me think that Shirou reminded Archer that a lot of people shared in their dream and Archer being in Counter Force doesn't mean the dream itself is wrong, delusional or that no one else trying to make it real.

My only issue with Archer vs Berserker is why he can't kill him the 12 times instead of just 6, even if we ignore the Caliburn multikill (Archer is supped to be from a Fate route where he couldn't save Saber, that means he had to project Caliburn from Saber dreams to survive that route) Archer can deploy UBW and spam A-Rank Phantasms or B-Rank Broken Phantasms and completely destroy Berserker especially since it has a faster fire rate than GoB and if Rin has mana to supply to Shirou's UBW and Saber at the same time she sure has mana for Archer's UBW alone.

Also Berserker isn't just standing there waiting for Archer to kill him 12 times, but is far superior to him in physical stats. And Archer would never target Ilya like Gil did, so Berserker wasn't limited in ways he could fight.
