Gintoki defined the VA as the guy who is mostly goofy but can switch directly to serious mode in a heartbeat
Unless you argue she only got cast as hibiki because of madoka, I think hibiki wins, at least in Aoi's mind. Symphogear convinced her to keep voice acting. Take a look at her in symphogear live 2013 and 2018, her level of confidence is night and day, her whole personality changed well after madoka.

I thought Madoka had a huge impact on her career but it seems like she got a fair share of roles even before it, so I guess I was wrong. Also, I thought that the confidence issue was related to the singing rather than voice acting itself?
Gintama was definitely popular as an anime, but Haruhi was a huge phenomenon that broke the barriers of late night anime and almost single-handedly started a new boom in the western world.
As a huge Sugita fan, personally I think Kyon was a much more impressive acting performance because he played the sarcastic type with a perfect balance while also providing extremely entertaining first-person narration; even though there are loads of LN adaptations with sarcastic/pessimistic MCs, none have come even close to the levels of charisma and likeability that Sugita achieved with Kyon (neither the actors playing the MCs nor the LNs copying Haruhi).
While Gintama is a crazy series with its mix of comedy, action, and drama, Gintoki ended up being more like Sugita himself horsing around. He is very hard to replace now, but if you went back in time when the manga wasn't that meta and the anime had just started with their aim of making it a mainstream-friendly evening anime (the plan they abandoned after the first year and went full retard with everything), I could imagine Gintoki being voiced by a seiyuu who's good at both comedic and serious moods like Seki Tomokazu, Onosaka Masaya, or Konishi Katsuyuki.
That being said, gorilla personally picked Sugita over all the people who auditioned for the role even back then, so in the end whether you like Gintoki or Kyon more is really just your own preference.
Koyasu's been voicing Dio for a long time now and I'd argue it's definitely become his most popular role. But he's been an industry legend long before that.
But Jojo has definitely had a share of career defining roles.

Yes but no-one thinks of Kyon when they hear Sugita, he was just "some dude" back then. Gintama has kino voice acting which makes all the roles memorable.
