It's been 7+ years since I read the first VN but from what I recall you can't resist a NP unless you counter it with a NP of equal or greater power. And the particular NP in question is a supernatural attack that bypasses cause and effect to kill you without actually hitting you.

We won't know what his limit is unless someone challenges him. So far he's fought a planet destroyer and a genius martial artist and other things with little to no real effort.

My understanding is that gae bolg will hit you no matter what, save for the luck stat, but that does not give it infinite destructive power. Like, if it a wall with the same durability as Saitama it would not destroy it, but maybe it would him since he´s a human?

I seriously doubt you have anything to back that up. Servants are immune to physical attacks because they exist on a different plane and only magic can hurt them. Saitama can't summon magical attacks or if he can they would probably be extremely weak on a servant-scale.
