Because fans always fall in love with full potential they see in a character. But she could not have a worse writer serving her, so she never could reach it. That's why her character development was completely cyclical under Kishimoto:

My point is that criticism of Sakura is perfectly valid, but should be leveled at Kishimoto's writing, not at her like it's somehow her fault. She's a character. She's not in control of her actions because she doesn't fucking exist.

It's also weird that even her being a main character, she was never relevant to the plot or the deeper themes and story.
Kakashi atleast had a beef with obito which really made him so important to the overall story and climax of the series.
