Rebellion isn't canon and the end is just saying that there's always a challenge beyond what you're facing now. The difference between pre and post madokami is that Homura isn't stuck in a loop yearning for the past/safety and can move forward with her life regardless of the difficulty.

Definitely Ichigo Mashimaro for me as well. I'm such a fan of this show and pretty autistic about it that I did a pilgrimage to Hamamatsu twice. I looked at their actual houses (except Matsuri's, because I forgot, twice) and numerous other notable locations that appeared in the manga/anime such as the crosswalk, Hamamatsu Castle/Park, the 'Ichigo Mart', their school, Lake Sanaru, and more. The whole experience was pretty emotional since it was all so new, but so familiar. Especially since I've been following the manga for almost 17 years now. I plan to do it again sometime.

Madoka, Rebellion specifically. There was a month and a half period where I would rewatch it every night, and I would find something new and make a new connection every time. It's really fun for stuff like that.
Even now sometimes I open it back up to just watch Homura's transformation, or the Homulily fight and I end up watching to the end without realizing.

I used to rewatch the newest episode of Panty and Stocking every day after each airing until the next one aired. I'd randomly rewatch past episodes as well. Since it finished airing I've rewatched it countless times alone, and with various groups of friends over the years who were watching it for the first time. I've basically watched it over and over countless times.

Not at all. Madoka's sacrifice created a better system for magical girls to exist in and a much less predatory way for Kyubey to collect energy, she was able to make a real change and improve every magical girl's life, even when everyone was sure that this was the way things had to be and that magical girls naturally had to suffer through becoming a witch and competing for grief seeds. As far as the story and everyone except Homura is concerned, Madoka's sacrifice is a closed book.
If you're talking about the movie, Rebellion is a story almost entirely focused on Homura's character and how she'd rather selfishly throw away all of the hope Madoka created and go back to a worse system if it meant having madoka back as a person. The world Madoka created is objectively better for everyone, and everyone except Homura is fine with it. Rebellion isn't telling you "having hope is futile because someone will always be there to tear it down", it just wants to show you Homura selfishly and impotently crying out and trying to claw her way back to an idealized memory, just so that she can have something she personally really wants.
The difference is that unlike what Madoka created, Homura's world is incredibly unstable and will fall apart at the drop of a hat. We're watching Homura lie to herself and everyone else pretending to be happy while rapidly falling down this self-destructive path. You're pity her or are disgusted by her, and wonder "how long can she keep this up?". She's not some tyrant who should make you feel hopeless, she's just throwing a tantrum.
If anything, all of this just serves to reinforce the idea is that hope is hard to achieve, but possible. Madoka was able to face reality and make a hard decision, and she got a real, sustainable change that improved the real world for the people who live in it. Homura wants to run from reality and drown in escapism, and she got a flimsy tissue paper backdrop that's painted to look nice and pretty.
