On average Dr. Stone looks a lot better even if it's not very animated, has better editing for a good viewing flow and a more exciting soundtrack. Vinland Saga does have some kino scenes like that webm but it's not the standard, and even there you have to accept a bunch of shaky practices.
Personally I appreciate the VS adaptation and on a technical level it's arguably better but I like Dr. Stone more for making me feel excited at almost all times, especially as an anime-only fan.

I think the anime has made some of the more simple moments from the manga better than they originally were. However, episode 7 was a letdown for me and was too held back by cheap and rushed animation. So now I don't know what to expect from the future. I'm just gonna tell myself that the hardest episode to animate is behind us now and that the next ones will look better and stay hopeful.
