It's really depends on the type of story, but generally three.

A core of 3, maybe 4 if the writer can handle it, and a million side characters. No more.

I'd argue that a well written universe doesn't need more than a single character. But two mains can still do wonders if well written.

I have been imagining an anime in my head it's been many years, to the extent which its plot and characters are much better than the industry's standards in my opinion. The secret to this is to think of three or four interesting characters, then merge them. There you go, now you have a very very good character.

One is lonely and sad.

Two is perfect for everything that wants to give an "intimate" feel and tries to explore themes of human relationship. Doesn't matter if it's siblings, best friends, business partners or lovers. Two is best.

Three is lame cause there's always one left out.

Four can be great, but I don't like the symmetry of it because autism.

Five is the next best after two. Small enough to have the groups still be closely tied together, but large enough to bring in simple factions and constant interplay between differing ideals.

Six is not really any worse than Five, but as I said, I'd rather have an uneven number.

Seven is the maximum number of people I would find acceptable for a group of protagonists. Don't want your cast to be too crammed. It's already hard to focus on any individual connection here.
