I just recently tried watching older stuff. I didn't originally want to watch old animation as i was afraid that the single layer style would throw me off and break my immersion. I went from original naruto to seasonal bullshit to hxh to elfen lied and finally i landed here. I'm glad i did.

No, but I'm not autistic about it. Cowboy Bebop has a good dub so watching in dub is fine. The show has a very western feel so in a lot of ways the dub feels more natural.

Because of the very western feel, wouldn't it feel more natural then to watch it in Italian over Japanese if you couldn't find an English version.

Single layer animation is the method of animation most common during the nineties. It's called single layer because the characters and objects are drawn directly on top of the background, instead of having two layers where one is the background and the other is the layer containing objects and characters. The method of using two layers was invented later and revolutionized animation. Double layer animation is what is commonly used today.
