I finished Akagi (The anime) and i liked alot, thoughs about washizu mahjong? I understood more or less the rhythm of the game although I don't know "well" how it works, do I prepare myself to read the arc in the manga?

Póker is retardedly easy, you get a hand, then decide if you want to bet on your hand winning, and get a chance to change one or more cards, I don't remember what goes first. Then you have another chance of raising bets or getting out but losing your initial bet, and then you compare hands, and the highest one wins.
I still have no idea how Mahjong works. I get that you have to make your 13 tiles into sets of at least 3 with a similar logic to Poker (copies of the same tile, ascending numbers of the same suit, repeated numbers of different suits), you always draw a new tile and discard a tile until you get the conditions to finish the round (all your tiles forming some set, the last two forming at least a pair between them, I guess that the best way to finish is with your 13 tiles forming one set). However, it seems to have tons of little autistic details and variations in the rules that I don't even know where to start.

You always need a winning hand (yaku) to be able to win. Focus on the easy ones: riichi (aka "don't open your hand and say when your hand is ready to win"), tanyao (no terminal tiles, aka no 1/9/winds/dragons, only 2345678 are okay), pinfu (aka only numbered sequences and ending with a two sided wait, like 23 waiting on 1 and 4, but it doesn't work with 13 waiting on 2).
Yakuhai is also a pretty easy winning hand : just have a pon of dragons, or a pon of wind with value. The winds with value are your seat's wind, or the round's wind)
You've got other pretty useful hands like 7 pairs (called chitoitsu) or all pons (called toitoi, your hand must be only pons)
Avoid getting fourth at all costs in online mahjong. The rank point penalty you get in fourth is way, way worse than third. A third can be offset by a second, while a fourth docks too much points to be offset by a first.

I wish Mahjong Soul wasn't so stingy with free rolls. It's already asinine that you can't progress basically anything until adept, then when you get there it's hundreds of hours of play to get even one girl, unless you're incredibly lucky. It's why I stopped playing shortly after it launched.
If I thought $10 would get me a girl I wanted, I'd drop that just to support the game, but that doesn't get you shit.
The easiest thing to explain Mahjong to people and to help them understand why and how it is different from poker is to explain to them that a hand's ability to win is independent from a hand's value.

Mahjong is piss easy. They try to trick you with a bunch of unnecessary rules and hands, but all you gotta do just get a handful of doubles. Just always aim for seven pairs, and you win. Probably.
With this strategy, while playing online, you will lose 99% of the time to tanyao, yakuhai or pinfu.

I don't know how to make a pinfu hand because i don't know what fu or how does it work.
1. Your hand is closed
2. All your sets are sequences (so no triplets)
3. Your pair is valueless (so no dragons, seat winds or round winds)
4. Your last incomplete set is a sequence with a two-sided wait (so 34s waiting on 2s or 5s is okay, but 13m waiting on 2m or 89p waiting on 7p are not okay)
Blackjack is just probability and memorization of what the optimal play is, given the circumstances. Poker has a psychological component to it, which changes things dramatically.
