Usually because the main heroine gets more exposure and the more exposure a character gets the more time we get to discover their flaws.
Once you are sold on a character and like them the worst thing that can happen is seeing more of them. For every action they take or every line they speak you risk them triggering a deal breaker and once that has been triggered then everything they do is now terrible.

Conclusion in the sense the show has to end, but the relationship themselves tend to play footsie endlessly and progress at snails paces to these faux-escalations where they reach "a new level" by kissing for the first time but then kissing doesn't become a regular thing.
