You don't gain excelia until your god updates your character sheet. You can't level up during combat. Ryuu's goddess is gonzo. Her exp is locked and she can't gain stats. If she joins Hestia it would normally overwrite her current exp bar progress.

A god can cancel the "contract" you wont lose your stats, but you cant gain excelia, but you can then get contracted to another god, .carrying over the stats.
I am not sure whether you can then get the excelia you shoul have gained while not contracted so dont quote on that.

Excelia is gained from a god giving you power. If you are in their familia the exp gain is basically them recording your story. Another god shouldn't be able to also record your story otherwise there'd be no point in having a familia because you could go up to any god and ask them to update your contract. A person adventuring in the dungeon without a god's blessing can't gain experience, so how could someone gain excelia from their god and have a different god give them power for it? Hestia can't record Ryu's story and give her power until she joins her familia, and she can't retroactively edit her previous contract from Astraea. Ryu's best course of action is to find Astraea for one last update before transferring familias.

Nah, there's a precedent that is Lili. She's been 2(?) years without any update and when she does convert into Hestia's familia, she does gain stats, although no level up due to being in the backline not doing shit, major reason why she thinks it'll be better for her to stop adventuring in vol. 8 when she got the marriage invitation by Finn.
Astraea is still alive and well, if she's gone (Dead), Ryuu won't be any stronger than the normal Falna-less elves. the way the system works is:
>Noobs with no talent, good genes, fighting experience + God's falna = Scrub, good for nothing except wasting space (E.g. Lili)
>Noobs with talent, good genes, fighting experience, learned Falna-less magic + God's Falna = Adventurer with special skills (Ais, Welf, Finn, Riveria, Gareth)
>Former adventurer (dead god) =+ New god's falna = Prior level before God's death retained, along with everything they have. Before getting a new falna, they're no different than normal human/whatever race they are
>Former adventurer (God alive) + New god's falna = Nothing happened, except when converting to the new god's familia (e.g. Mikoto, Welf, Lili)
Ryuu's case is the last one, her Falna's been modified to the last step before conversion, so when there's a God willing to accept her, and she accepts becoming a part of their familia, she'll immediately be a part of their familia with all stats, excelia, shit from training/adventuring retained.

Ryuu is working at the Hostess of Fertility, she doesn't regularily go into dungeon (well, to visit the graves) but I think that she trains regularly, so you can reduce the 5 years to something like 1 year of normal dungeon exploring. She will get a stat boost once her status is updated (especially for the Goliath fight, it was one level above her), but it will be not as huge as we may expect.
