Is it better to watch the show then follow up on the manga or go through solely the manga entirely?

Anime then continue with manga. Although they might animate the final part soon

It's a great adaption up until they change studios,I can't remember what season. After that, it's about equal with the manga.
The last chapters aren't adapted, so there's that.

The adaption is great, mostly because of the VAs. First few episodes (especially 1-2) are a slog though but they pickup quickly. It stays great until after Enchousen season which is like 250 episodes in I think? The later episodes were handed to another director and studio (although it's still more or less the same people) and I feel like the quality is different. Some of the best comedy arcs of the show are made by them though. Still good for what they are.
The movie was made by the old team and is also pretty damn great.

Sounds like I’ve been missing out. I remember occasionally seeing it dubbed into my native language a lot of years back. Guess it’s time to see what all the hype some people had on it was about. Thanks.

you must watch the first 265 episodes (sunrise animated eps) , the rest of the episodes are not that bad but just not as good as the sunrise anime . i would recommend watching the anime anyway for the great VAs

Watch the show. The original material is top-tier and the music and seiyuu acting elevated the whole thing to unprecedented highs.

And by the movie I'm sure you mean the original one, not the Benizakura arc retelling.

Gintama is one of the few exceptions where the Anime is better than the manga. the team at Sunrise which worked on the anime understood Sorachi's style of comedy and doubled down on it.
Heck, I'd say the entire team from the animators to the VAs really enjoyed working on Gintama anime.

Yeah, although the Benizakura movie is alright too. You can just skip the episodes and watch it.

Does gintama actually stay good or does it go downhill overtime like lots of long-running manga/anime do?

Is funny when it's main focus is to be a comedy, it wents to shit when the "serious" arcs started to be frequents.

After years of knowing about this series I've decided to give it a watch, I had no idea it was 367 episodes long, I'm 5 minutes into the first episode, what have I gotten myself into?

Watch the show as it has the greatest voice acting the world has ever seen.

I think people are being too harsh on the new studio, Gintama 2015 in my opinion is *probably* peak Gintama in both comedy and shounenshit. Though I guess this more to do with the source material's style having "matured" by that point in the series (and honestly, just by virtue of having SA arc you already have an advantage when it comes to shounenshit) than the studio themselves, and maybe Sunrise could've done an even better job with them.

Do both. Watch the anime and read the manga. Get the full experience.

Bandai Namco is Sunrise's sub studio and they started making Gintama in 2015. They apparently kept some of the original staff, but you could tell just from the animation, character designs and occasional shittily written episode that something had changed in the production.
