If you want the full experience your best bet is to reread the manga. I haven't seen the movies in a long time but it leaves out Wyald, Guts' backstory, some minor character scenes like Griffith Imagining a normal life with Casca and probably some other stuff too. It does add Skull Knight though.

The '97 anime cheats a lot by using painted still frames, but if that doesn't bother you it holds up. Something else worth noting is that up until the Eclipse and with the exception of Zodd, the anime cut out all references to the supernatural and expanded Guts' interactions with the Band of the Hawk to make it more of a standalone story since it only covers the Golden Age arc. In many ways, it's the best adaptation Berserk's ever received, but it still only ends up being a companion piece to the manga rather than something that can substitute it.
