None are canon and none of the characters are canon unless mentioned in the manga (like Shiki has been)

Shiki is canon because he's mentioned in the manga. Chapter 0 is generally considered canon too since it's drawn by Oda and depicts the events mentioned in the manga.
Carina is not canon since she's never mentioned in the manga and is created for the movie.
