I have a big question. Didn't they establish that the depetrification is a chain reaction? So that means you only need to use it on one part of the body and the whole statue gets destroyed. Then why was there remnants of the statue on Senku's neck and Yuzu's foot?

That's still an overall mystery. But maybe the birds have a trait that is shared with humans. It's like how rats are used for experiments because their genetic material is closer to humans and because they can go through generations faster.
