That punch didn't even make Luffy bleed; he only had generic scratches. If we're looking at it logically, only the damage that Luffy sustained was given to Zoro. What really harmed Luffy at all during the entire Thriller Bark arc, besides those fucking brickbats from the very beginning of the arc. Most of that damage should've come from the stress he took from all the shadows + gear second and third. Oda knows what a samurai is and that iaido was the most important mastery for samurai for hundreds of years, and it has a samurai philosophy behind it.
We know Oda is aware of his own culture because he drew Ryuuma using it to win, he draws Zoro (literally Mr. Bushido) using it to win, and he draws Shutenmaru using it to try to win.
It seems more likely that Oda is Choosing to hide Kinemon’s iai rather than forgot, or decided he can’t use fundamental samurai techniques.

This is because samurai are supposed to be always ready and it showed clearly Oda thinks of Kinemon as a legitimate strong samurai like the others.
