Likable characters and interesting setting. It's as simple as that.
I dunno. I only watched the first season and the only truly entertaining episodes to me were the Mr. President episode and the time travel episode with the canal and bridge. I think the show is low key to a fault. Akari, Aika, and Alice are pretty boring, one-note characters without much going for them.

If you're talking about Aria the Animation, the series gets much, much better after that. I regard it as a somewhat flawed adaptation, which is strange given how much the series improved thereafter. Also, read the manga
You seem to be transitioning from someone who calls things "200 IQ" and "comfy" into someone who wants to make thoughtful and informed statements, so maybe seeing young people going through a fairly realistic portrayal of setting out on their careers has made you realize that it's time to grow up and finally start behaving like an adult.

That's all i can figure out so far, still can't fully understand why I found aria to be a lot better than most slice of life shows.
I seem to like the Animation more than most people. I was disappointed that cats stopped being used as links to old Aqua and instead became purveyors of general supernatural fuckery headed by Cait Sith.
From what I recall, though, the episode where she literally crossed a bridge encumbered with cats 150 years into the past was an anime original, so the prominence of that element may have been more of a Junichi thing.
The one thing that detracts from the setting for me is the nature of their job.

I believe it's mentioned in the episode with grandma. Undines typically retire in their 20s and she was considered remarkable for continuing into her 30s.
Athena retires to become a singer and I believe Akira retires from actively giving tours to work at the home office instead.

Dunno, as said most probably try to get married and be a housewife. Being a boat tour guide for a decade doesn't seem like it has very many desirable job skills that employers would be looking for. If they don't get married they probably hang around the city and open up or join some other small tourism-dependent job.

On the contrary, their bookings were actually expensive as hell and Alicia and the other two were virtually always booked. They should have more than enough to retire comfortably by the end of their tenure, especially since its not like they're seen to live lavish lifestyles, and Alicia in particular is the sole operator and owner of Aria Company.
Not sure exactly what the cost of living on Mars is exactly though. It's not a easy place to maintain, many jobs are done manually just for the sake of it as well. And its mainly a tourist spot, somewhat far and seculded.
Which all gives me the impression its kinda like Hawaii I suppose, which has a notoriously high cost of living.
Of course our characters were all the best of the best. The lesser undines probably have it way harder. And then theres the ones that work the public ferry or whatever.
Don't know where you took the mid 20s thing from. With the background the series gave us, we know age is not a problem. Grandma was the top undine for over 30 years. Alicia and Athena quit the job because they wanted to do other things, but Akira still is an undine when all is said and done. Being able to be a good undine requires more than good looks and experiences makes the best ones out there (and better experience=more money), there is no reason to believe good undines can't keep their carreer until middle age.
