I showed my younger sister (8) Princess Mononoke and she really like it, but I showed her Nausicaa of the Valley of the Wind and she liked it much less than princess mononoke, she got another ghibli movie from the library (The Wind Rises) which she said she hated. I'm kind of at a loss for suggestions for her, would anyone have any ideas?

At 8 years old? I fucking hated gorey shit at that age, while I loved other Ghibli works like Castle in the Sky, Totoro, and Howl's Moving Castle. It wasn't until I got older did I start to enjoy works with more gore in it. There's a reason age recommendations exist.

Summer Wars, the Girl Who Leapt Through TIme, Steamboy, Patlabor, Eve no Jikan, Omae Umasou da na (amazing), Sakasama no Patema are all solid choices for children

If I had to give a firm recommendation, Omae Umasou da na is absolutely amazing, while being child appropriate, and Cagliostro is probably the best childrens film of all time. Since it sounds like your sister has better taste than you, I can guarantee she'll like either of those movies.
