I believe in the idea of sexuality being a spectrum. Things like pederasty were common and accepted in places like Ancient Rome and Ancient Japan.

As someone who actually went to an all-girls high-school, I can tell you that this is mostly horseshit, especially among the day students. There are plenty of oppurtunities to meet boys outside of school.

Some boarders do form really intense friendships, but they're definitely not sexual. Girls would form pairs and be referred to as a unit, i.e. "Jane-and-Lucy" (usually for teasing purposes). People would joke about date nights and anniversaries for these couples.

Exciting gay things happened, of course, but it was not the norm and probably less prevalent than among boys in similar situations.

Well when you get a large amount of hormonal teens in one place those hormones are going to start running wild. If people of the opposite sex aren't available then those feelings can be turned toward people of the same sex.
In some Western schools, for example, there's the concept of Lesbian Until Graduation. I think that we see it more with girls because in a lot of societies it's a lot more acceptable for girls to experiment with their sexuality with men.

And of course for some women it turns out to not be just a phase, like with Sayaka in Yagakimi. Class S definitely seems to be on its way out as a serious yuri trope in Japan.

Sure, I agree. But there's always some degree of doubt that the whole genres and stories could be made out of thin cloth. And yuri genre is one of those, since as a guy you have no chance of experiencing all girl school life by yourself.
Reading first hand mangaka accounts that at least some of their yuri manga plots and ideas are based on real life gives the fiction some degree of validation.
Not even talking about full-on sexual relationship, but even the tamer romantic stuff you often see in anime and manga, like fawning over popular senpais, awkward valentine day gifts, exchanging photos of popular girls etc.

It's pretty fun if you watch it like a regular anime and don't go in expecting a full blown yuri.

It's relevant only in the fanbase, though the show can give you a couple of fun stuff in terms of "material", but it's just a all around good ol' friendship series. Think a bit on how Nintama Rantaro and Petite Princess Yucie are in general and mix it with The Worst Witch, that's how this show is.
