Soul Eater was Ohkubo being kept in line by his editor when the anime hit it big. Remember early SE was basically how FF is now. When the anime popularity died down they let Ohkubo off his leash again which is why it ended the way that it did.

It's mostly because the pacing is really bad and not a lot of stuff gets accomplished. Maybe if it were marathoned it'd be better

Anime is competently made. The manga's problems don't really come into play until later and they're mostly just pacing and tonal issues, which can be fixed or ignored when adapting it.

Reading the manga I'm kind of surprised that the nun is literally completely useless. Only there for PR and religious reasons rather than any practical reasons.
