It's not the usage of scientific theories, it's the need to info dump every trivial detail about said theories. Most people who would actually do these kinds of things wouldn't be assed to explain what they're doing, especially to a known meathead. They'd just say "I'm making nitric acid, go grab me some bat shit."

Again, since the author needs to assume their audience is comprised of 12-year olds, they can't really expect them to know how to go and look up what nitric acid is, so we're left with a long info dump of why the characters are using it and how it's made. If this were targeted at adults, the long explanations wouldn't be necessary and the plot could move forward at a quicker pace.
