Hybrid vigor is an overstated phenomenon which gets peddled throughout sci-fi/fantasy as deliberate miscegation propaganda.
Whatever mild increase in immune system strength and such a mixed-race child receives is undercut by the documented effects of outbreeding depression: namely much higher risk of miscarriage, greater than average mental/emotional instability, and increased difficulty of recovery/treatment when you do get sick.

But in some way they are the best of both worlds, of course they would be powerful than a pure one

I think it's often not about making the protagonist stronger but about giving them a different perspective from everybody else.
They'll get power-ups anyway. The MC must be powerful and the agent of the story.

I think Ichigo pretty much embodies the essence of the shounen MC, for better or worse.

In Bleach it's explained as all these races originating from the same individual and Ichigo in effect being a reconstruction of this individual.
Also, it's not the mixed races that makes him strong. It's the component parts of each. Shiba are the strongest of the noble families. White is an ungodly beast. Ichigo's quincy blood is royal.

There is not even such a thing. "Quincy blood" is just Yhwach's blood given to humans. It's not even a different species. They're all the same.

There is a distinction between converts and blood descendants. The novels stress that Yhwach is the biological ancestor of all quincies and is genetically similar to them. Converts are a recent phenomenom.
Also among the surviving quincies the Ishida family was seen as the leaders.

In most cases in Anime its not about races. Its about heritage, in the true feudal way.
Its not about blood, but about the rights and training the blood grants.
I.e being of a line of Master Horsemen means being trained from a early age to ride horse, hence being a master Horseman. Being of nobility grants superior access to food, teachers, warfare education and sociopolitics.
Once you start doing the anime way, this is for RIGHTS and whatnot.

Often in anime you get the characters bloodline, and then they are allowed to train with that bloodlines trainer. I.e Jirayia, everyone in Bleach, etc.

Hybridization has rarely worked out as pure hybridization in anime. If it do, its mostly for secondary characters.
For primary characters and protagonists its all about being super duper powerful. For secondary characters its more about drama and substance.

Ichigo's hybrid nature actively inhibits his true powers from ever surfacing. One is the power of quincy that Yhwach did not under any circumstance want to risk awakening, two is the power of the hollow whose strongest attack is still a generic beamspam that anyone with his bloodline can do.
The only benefits Ichigo sees from being a hybrid are having seemingly no level cap and having rapidly increased stat growth.
