I don't think any character in Eva represents escapism, and the people who try to argue this have flimsy examples/arguments.
Rather, a lot of the characters engage in escapism on their own and have dynamics with characters that fuel their inner version of escapism.
For example, Misato to Kaji and Gendo to Yui - but that doesn't suddenly mean Kaji and Yui represent escapism.
With Shinji's relationship with Kaworu, it wasn't Kaworu himself that represented escapism, it was Shinji's obsessive reliance on him and his love that caused Shinji to idealize him to fuel his own escapism.
