It's not "ah-nee-may" either. The A is flat (naturally), but it's comparatively short (the H would prolong it).
The same is true for the E at the end. It's a short, simple and flat ME syllable. "May" not only only longer, but also rounder.
Phonetically, anime is simply "anɪmə", not "aːniːmeɪ" as you suggest.

even French pronunciation has different intonation. it's way closer than in English, true, but the intonation is sometimes hard for Japanese people to understand, from what I recall.

No never, I always knew how to pronounce it. On forums I autistically typed it as animé for the longest time to teach others how to pronounce it. Though sometimes in real life I jokingly pronounced it "a-nyme".

Well, that could be argued. But the ME "anime" is short and open. That fits a non-stressed "ə" best.
Several European languages, mostly German and French, like to prolong the e in "anime" and stress it with a rising voice. Think the French participle, for example "marquée" (maʁke). But Japanese don't do that.
