I've read explanations and they don't improve the show. So much of it is meta knowledge or lore that it doesn't actually say much about the show itself.

At this point I can't tell if people bringing up the Christian symbolism in Eva are actually trolling, or just that fucking stupid. It's a point of criticism that has been debunked so many times, in so many threads, that I can only imagine that the people bringing it up are just doing it to bait.
It would be pseud if the anime didn't follow any of it but it does, quite a bit actually. Stop using words you don't understand and, again, go read a book. You know, those things made out of paper that have thousands upon thousands of words printed on them.

I've yet to finish it (about halfway through) and I gotta say I agree so far. There are moments of greatness but they're so few and far between. A lot of the character stuff is just bad and boring (though it does seem to be getting a bit better) and I just wanna see robots fighting cool monsters.

Imagine if you would a world without overly edgy overly "deep" anime, when giant stompy robots came in two flavors: superhero and the costume of a super hero
Evangelion stepped forth and ... trolled the shit out of everyone expecting a giant robot show in any flavor. It went straight to psychological drama and the robots were generally window dressing. It profoundly altered the tone and plot of almost every show that followed for a very, very long time (although one might argue that giving NGE credit for making serious anime possible is too much for one show). It's less well known for being good as it is for its impact on the industry.
The fact that it was nakedly mercenary in its merchandising only cemented its reputation as a game changer To this day people have no idea why things happen in the show because so much of it was explained elsewhere

even some arthouse classics can be apreciated by your average retard, seven seal isn't one of them but i'm not afraid to recomend movies like a clockwork orange to the average joe, what i wouldn't recomend is andrei rublev and black moon for someone whose favorite movie is infinity war, my point is that some artsy stuff can still retain enough entertainment value for normalfags and i think eva is one of them.

I think it's was groundbreaking when it came out. now it's mostly nostalgia, but the themes and character development are still great, but if it was realeased today the pacing and exposition would be different because now we know better. Like FF VII is great but if you were to buy €60 with this kind of line delivery you would be dissapointed to say the least.
The whole "Christian References" thing, it's there, but it is VASTLY overshadowed by references to the Kabbalah and the Torah

The weak points in the cast of Eva would be the best characters of most shows.
It's not really deep unless you take Kaworu's answer to the questions raised by the show to heart. And unless you've studied psychoanalysis and philosophy beforehand you're gonna need help understanding it, so this makes it not shallow to say the least.
Oh and you'll be lucky to find better visual direction and editing than EoE.
