Imagery can have no deeper meaning but "symbolism" inherently does. I think Anno has gone on record to say the Christian overtones have no meaning beyond looking cool, but there is still a lot of symbolism to understand and analyze in Evangelion.

She started drinking coffee because it reminded her of Kaji, who always preferred coffee over male-associated drinks like beer (which is what she actually prefers, so it's a sort of role-reverse on gender subtypes too, in a way.) Except Kaji didn't prefer warm homemade coffee from a pot. He preferred cold, canned brand coffee from vending machines and shit. I wonder what that could mean.
Pretty sure he just said that shit to fuck with people. Even the Christian imagery has a ton of meaning and symbolism going behind it; it's just that it isn't often associated with its original, intended, religious meaning. It's more like Anno takes them at face value and applies his own themes and meanings to them instead.
