Strong Lifts 5x5. It's OK, has an app to help you track work outs, it's a good beginner program if you've never lifted. There are better, more satisfying routines, though. Doing SL for too long is a waste of time, IMO. Use it to learn basic lifts and establish routine, then look into better programs, otherwise you'll into T-rex mode.

Stronglifts is garbage because it has you squat 3 times a week(This is good, but your lacking volume on literally everything else, no accessories like either, which can be quite helpful to build mind muscle connection for the lats) and deadlift only 1x5. Granted, you're guraranteed to make progress anyways, but the deadlift volume is definitely too low.

I've been lifting 130 lb at the bench once a week for awhile now, but I don't think I'm improving much. I aim for 5x3 but usually can only do 5 reps the first time. I'm wary of lowering the weight - I did 115 lb for awhile and didn't really seem to improve. Similarly for bicep curls, I feel like I've been doing the same 30lb 5x3 for months. Do I need to do it more often?

deadlifts have always been pretty easy for me but that's a mixed bag for a lot of people, if they give you a lot of trouble I'd suggest picking up working in some pullups to build your grip strength

You can't remove fat in a targeted manner, your body decides what it uses when it needs the energy. Doing exercises can help firm up an area because you build muscle there, but it doesn't help remove that particular bit of fat.
So just lose weight and eventually the man boobs will be gone.
