Which is why the loss of the El-Melloi crest was such a blow for the family. Thousand of years of cultivation, hundred of souls grafted into a mana machine, all disappearing overnight. The El-Melloi are pissed.

A soul has a fixed number of maximum magic circuits, from their separation from the Origin. Sure, Shirou converted nerves into magic circuits. That's right. But creating one out of nowhere is a strong impossibility in the Nasuverse. From birth, souls overflow into the world with a strict number of magic circuits. Shirou never created new magic circuits. He just transformed nerves into the magic circuits he had all all along, which is completely retarded, and why Rin badmouthed him so much.

At the risk of sounding like a broken record, the VN experience is really incomparable to the anime. Also, it frankly doesn't matter if HF is even god's gift to adaptations since it's permanently marred by Fate and UBW having godawful and meh adaptations respectively. It's shocking how many people still fail to understand that the three routes are not three separate stories, but rather a single one that's meant to be read linearly and heavily relies on comparison with and knowledge from previous routes.

The best example of this has to be Saber in Fate route and UBW. The entire thing with Archer wanting to erase his past self is a parallel to Saber wanting to wish to prevent herself from pulling the sword (effectively erasing her past self) which culminates with witnessing Shirou exemplify the earnest ideal that she herself had in the past. It's a better explanation for how Shirou mends Saber's heart than happens in Fate itself.

He also has a pair of Mystic Eyes, originally with the ability to find things, later turned into the "Mystic Eyes of Usurpation" (簒奪の魔眼, Sandatsu no Magan?) that can usurp at will the vision of any eyes, regardless if it's from a human or a Divine Spirit.
That's actually a fun powerset for an antagonist.

It's kind of easy to get though. The need to follow a path bigger than themselves make human emotions a burden, they can't think only about their own goals but also about the legacy they have to give to their descendants. It's a very self diminishing way of life, so morals can be end up thrown aside for that bigger goal.
And there is also the fact they are still human and they are prone to human failings, that's why the cutthroat politics of the Clock Tower exist.
As Touko explains in Paradox Spiral, magi are ultimately a walking paradox. They strive for inhumanity for the sake of their path but also still remain too human for it.

I dunno about the crest being extra circuits themselves, but the most essential definition of a crest, at least from Case Files' explanation of it, is that it's "Fixated Mystery"
The most essential aspect of a crest is that grabs a piece of mystery and solidly anchors it to the magus, essentially giving him or her an elevated "base level" of mystery (AKA mystery-o-meter powerup), which translates into allowing for the easier and more potent activation of spells. For this reason, all crests have a part of a phantasmal species as a core.
The "growth" of a magic crest is the process of "writing" all your life's research into the "harddrive", allowing your successors to immediatly make use of your life's work without actually spending decades redoing the research, all in a convenient package that boosts casting speed and potency. I suppose an SSD is the best comparison.
How branch crest maintain mystery I'm not sure. It's unlikely that the original crest will let go of the phantasmal species' core, so I can only assume that the crest as a whole gets imbued with mystery over time so you're good to go with only a piece.
