Whenever I'm watching anime, there are sometimes these scenes where a character declares they're doing something selfish even though they're literally giving their lives for another person/busting ass for another person and more.
Hinata risks death for Naruto and says she's "Just being selfish" and when Senko-san decides to keep pampering Nakano she says that it's selfish of her to do that too.
Do the Japanese have a different idea of what "being selfish" is or am I just seeing things?

I've read HxH, Dragon ball, one piece, shaman king and bleach and even tho I really liked some villans from them, I've always felt that Naruto villans were more memorable and affective when it comes to likeablety and originality.
Most of his villains are charismatic and have good designs. His writing isn't perfect but thematically almost all of them address the fact that nobody becomes evil in a vacuum. Each villain serves to develop the overall theme that culminates in part 2, that the world they live with cool magic ninjas in is actually garbage.

What Hinata meant when she said she was being "selfish" is simple. Naruto literally tells everyone in the village to not interfere with his fight with Pain because they would all just get in his way.
