Also the new world isn't your typical medieval setting, they've developed spells for convenience for example spices, fire as well other things that are tier 0 to tier 1 that a good portion of the population can use. The undead are there for physical labour, not spell casting. Also farmers aren't paying Ainz anything for their property, from volume 10 it seems they're giving him wheat. One last thing, there are spells to affect the soil so that farmers can have a bigger yield, again the undead are just there for physical labour, these people aren't living the daily struggles of the typical medieval setting, the only thing they have to worry about are diseases, of which the church can easily cure for a small sum, there are workers (not adventurers) like Roberdyck that would do it for free. These are benefits of living in a city, villages have it much harder as they are more likely to be attacked because of their distance from cities and lack of walls

Military will be more diverse in skill.
Construction, transport will rise in complexity.
That would cost the government at least 20-30 years of investment to train those illiterate old folks in basic education

Chances are, you are going to be begging the nearby nations for highly skilled laborers who can teach your people.

because the undead Ainz lends out aren't farmers. sure they can push and pull, but they can't farm. sure, they can swing a hoe, but they can't plant seeds. the peasants - the farmers - can, and so instead of the farmers doing the hard work, it'll be the undead that does that. the farmers are essentially elevated from, well, peasants, to low-tier managers who no longer have to do the heavy labor.
the dwarves working on road work on E-Rantel is proof of that. they were busy managing the undead laying down construction materials on the roads, rather than doing those themselves. the dwarves themselves love the idea, since they who have the knowledge of construction work who used to do the hard labor, now only has to order the undead around to do the heavy work for them
in the case of future generations of citizens, the next generation will have be taught how to manage the undead, instead of burdening them with the labor stuff. if you think that's bad, then just look at yourself right now - what will you do if the electricity runs out completely? you'd be likely to lose a huge portion of everyday life, no?
