Your entire post is based on the assumption that Ainz's kingdom has nobles. If you didn't know Ainz established himself as king and has no nobles under him, Empire is a vassal state experimenting with undead labour long before him and the kingdom will soon collapse.

Also the new world isn't your typical medieval setting, they've developed spells for convenience for example spices, fire as well other things that are tier 0 to tier 1 that a good portion of the population can use. The undead are there for physical labour, not spell casting. Also farmers aren't paying Ainz anything for their property, from volume 10 it seems they're giving him wheat. One last thing, there are spells to affect the soil so that farmers can have a bigger yield, again the undead are just there for physical labour, these people aren't living the daily struggles of the typical medieval setting, the only thing they have to worry about are diseases, of which the church can easily cure for a small sum, there are workers (not adventurers) like Roberdyck that would do it for free. These are benefits of living in a city, villages have it much harder as they are more likely to be attacked because of their distance from cities and lack of walls

Not every field will be effected since most job classes cannot be learned by the undead that are laboring in the fields and the heavy lifting part of construction.
Those that are effected will be provided support by the state hence socialism/communism.
With all the free time you learn magic and skills which will increase the rate of rare talents and skills which ainz wants along with more yield for his exchange box.

if Ainz is forced back into nazarick because another player forced him inside, he has already lost unless he uses wish, a caster player can just use 9th tier spell to destroy nazarick from the outside, and if he attacking player has WCI of his own, most of nazarick defenses will be gone, imagine someone casting earthquake or wish to blow nazarick sky high.

because the undead Ainz lends out aren't farmers. sure they can push and pull, but they can't farm. sure, they can swing a hoe, but they can't plant seeds. the peasants - the farmers - can, and so instead of the farmers doing the hard work, it'll be the undead that does that. the farmers are essentially elevated from, well, peasants, to low-tier managers who no longer have to do the heavy labor.

the dwarves working on road work on E-Rantel is proof of that. they were busy managing the undead laying down construction materials on the roads, rather than doing those themselves. the dwarves themselves love the idea, since they who have the knowledge of construction work who used to do the hard labor, now only has to order the undead around to do the heavy work for them

in the case of future generations of citizens, the next generation will have be taught how to manage the undead, instead of burdening them with the labor stuff. if you think that's bad, then just look at yourself right now - what will you do if the electricity runs out completely? you'd be likely to lose a huge portion of everyday life, no?
