Originally it wasn't Waver and just a background soldier. It's just by coincidence that the zero's rendition of him unintentionally resembled adult waver, but when fans pointed it out they decided to just roll with it because it's canon-friendly and kind of a nice touch.
The heroes summoned in Iskander's army are drawn from outside of time as long as they've pledged to follow him, which means even Waver's adult self can be there when the real waver is young. Just like Shirou and Archer.

This isn't really a fate spinoff. It's as much a spinoff of zero as FGO is a spinoff of melty blood. Just because they recycle recurring characters from the shared universe doesn't mean they're directly related to each other's story. Fate is best when it is character oriented and actually remembers that half the knights and kings it depicts are, historically speaking, fucking awful people instead of completely romanticizing them like Fate Grand Order has. I mean, Fate has always romanticized it's characters but the difference between Neros debut compared to how she's depicted nowadays? A trainwreck. Also, characters like Joan of fucking arc barely talking about her religion or faith to make her more palatable to a Japanese audience? Why even bother then?
Some of the writers romanticized depictions are more tolerable than others but I can't fucking stand how the Apocrypha guy in particular writes his characters, same thing goes for whoever wrote Extella, but I'm not sure if that was neo-Nasu or that lady who wrote Rome in FGO. I really do love this franchise but the vast majority of these characters are pure, wasted potential. You have years of history and multiple legends to use for their personality and somehow they manage to turn somebody like Elizabeth Bathory into a Japanese style idol.

No, not really. Shirou only won against Gil because he has good affinity against Gil inside UBW. It's stated he wouldn't be good against any other Servant types except Gil Archer. Even then it was a close call since Gil was being an arrogant dick and didn't use Ea early due to stubborn pride. Against Archer, Archer was literally powering Shirou through their trace connections and blows, and Archer was already low on mana when he fought Shirou, and even then Archer was able to win but was distracted by a moment of realization that made him wavered.

The whole argument is silly, since the entire thing could be called edgy. I mean, the protag in the first route doesn't want to wish these kids who've been life drained for a decade to good health not because the grail doesn't work in his mind, not even thinking of denying using it because obviously evil priest (whose words he believed in HF despite him obviously lying) offered it to him, but because he doesn't want to change the past. He didn't have to change the past, he just could have wished them to be in good health if he was assuming the grail works. Then we have Gil slashing out Ilya's eyes unnecessarily. If we wanted to be dismissive, the entire thing could be described as edgy.
