Is it really just about trying to keep your head together even though you feel like shit's apocalyptic? Because I don't know how good a job it does with that, given how terribly things tend to end for everyone involved

It is about surviving the apocalypse, because everyone is trying to survive an apocalypse the sense that the world is a changing place, and we have to change our way of life to keep up with it. So, how do you survive the apocalypse?
- Learn from your father's advice, because he's not so different from you and has gone through a lot of the same problems, but don't just do whatever your told, because he's fucked up and has his own goals, and doesn't necessarily more about you than those goals
- Accept your mother's love, because it'll give you the strength to do what you need to do to survive, but don't try to regress into childhood, because then you won't be able to live up to your responsibilities
- Don't run away from your responsibilities. The apocalypse is unavoidable, but it's up to you to reshape the world that comes after
- Most importantly, bee yourself and love yourself, because if you don't, nothing you do will turn out the way you want it to.

No one. He needs a therapist. The only reason he "loved" Kaworu was because Kaworu was selfless love and unconditional acceptance personified, which is what Shinji wanted. Rei and Asuka were human beings with their own heavy trauma, and didn't coddle Shinji.

All the 3 main girls are human beings though and can't just show unconditional love to the MC without wanting some compassion in return, as blatantly exemplified between Asuka and Shinji in the EoE Kitchen scene right before 3rd impact. Rei doesn't fit this mold 100% I think though since a lot of her character development of becoming an individual was based around the maternal care she developed for Shinji.

Its real, but on the way to becoming adults people grow past the need for their parents unconditional love. They would otherwise remain stagnant.
The thing is shinji grew up without receiving any of it, what little time he did spend with his mom he completely forgot about.
That’s why Kaworu loving him was such a big thing to him, it was the love of a friend, a parent, an ideal self, a lover all bundled into one.
